I'm not sure if there is another family out there that consumes cereal as much as we do. Seriously. We even do a lot of oatmeal mornings (and now steel cut oats is a new favorite), but box after box of JUMBO sized cereal goes through our house regularly.
It really is the perfect snack throughout the day and at bedtime.
However, lately our cereal selection has been low. Really low. Choice A or choice B and we're all getting a little weary of Rice Krispies and Cherrios.
So this morning we tried out Jamie Oliver's Granola.
DELISH.
I must say that Jamie Oliver's FOOD REVOLUTION cookbook is a must have! (We found ours at Costco!) We have yet to make a recipe out of there that we don't like and his granola didn't disappoint. So much so we made a second batch so we could have it as a choice C this week :D
Here's what you need:
2 cups quick-cooking oatmeal (not instant)
1 cup mixed nut (hazelnuts, almonds, walnuts, brazil nuts)
¼ cup mixed seeds (sunflower, poppy, pumpkin, sesame)
¾ cup unsweetened dried shredded coconut
1 teaspoon ground cinnamon
1 ½ cups dried fruit (raisins, cranberries, apricots) - we used dried mango!
5 tablespoons maple syrup (or honey)
5 tablespoons olive oil
Directions:
1
Preheat the oven to 350. Put your dry granola ingredients including coconut and cinnamon, except for the dried fruit on a sheet pan. Stir well and smooth out. Mix maple syrup, olive oil and vanilla in a small bowl. Drizzle over granola and stir.
2
Place in the preheated oven for 25 to 30 minutes. Stir every 5 minutes take the granola out, stir it, and then smooth it down with a wooden spoon and return to the oven. Be very careful not to burn it.
3
While it is roasting chop up any large dried fruit. When the granola is nice and golden, remove it from the oven and add the dried fruit.
4
Once it is cooled, store in sealed container. It will last up to 2 weeks.
